Description

This position involves job sharing between two programs: research-based interventional program Medical Nutrition Therapy for Prevention (MNT4P) and Georgia CTSA Clinical Research Center (GCRC). Works in conjunction with Registered Dietitians to develops nutritional care plans and provides nutritional counseling and education to patients and responsible for operation of the nutrition research kitchen. Provides nutritional care support services by assisting with dietary assessments and the collection of dietary data for one or more research projects or studies.


Participates with the follow-up in reporting blood and diet results to monitor patients for MNT4P/research follow-up under the supervision of RD and assists with data entry to maintain flow sheets.

 

 

JOB DESCRIPTION:

  • Provides nutritional care support services by assisting with dietary assessments and the collection of dietary data for one or more research projects or studies.
  • Screens and assesses patients to identify those needing nutritional intervention.
  • Works in conjunction with Registered Dietitians (RD) to develops nutritional care plans and provide nutritional counseling and education to patients.
  • Assists with calculating diet guides, formula education and diet instructions appropriate to the age, medical condition, outcome goals, and needs of the patient.
  • Participates with the follow up in reporting blood and diet results to monitor patients for post clinic follow up under the supervision of RD and assists with data entry to maintain flow sheets.
  • Performs basic clinical functions including nutrient analysis, and formula order verification and recipe entry.
  • Conducts nutrient analysis per policy.
  • Enters nutrient analysis and formula order recipes into Nutrition database.
  • Verifies formula order recipe in Nutrition database.
  • May conduct other clinical functions under the supervision of a RD.
  • Supervises and assists in the production and delivery of research meals:
    • Cooks and prepares a variety of food according to production guidelines and study-specific recipes
    • Bakes, roasts, broils, steams, and uses a variety of cooking methods on meat, vegetables, starches, and other foods.
    •  Sets up the workstation with necessary ingredients and equipment.
    •  Prepares ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items.
    •  Safely utilizes a variety of utensils including knives.
    • Operates a variety of equipment including ovens, stoves, mixers, scales, etc.
    • Arranges, portions and weighs food according to established study guidelines.
    • Cleans and sanitizes work areas, equipment and utensils.
    • Maintains excellent customer service and positive attitude towards study staff, study participants, co-workers, etc.
    • Ensures security of the metabolic kitchen.
    • Other duties and tasks as assigned by the bionutrition kitchen manager.
  • Handles ordering and inventory process to maintain adequate and safe supply of nutritional products and supplies.
  • Maintains inventory control and orders and stocks nutritional formulas supplement and supplies according to policy and procedures.
  • Participates in on-going process improvement activities of the department.
  • Performs other responsibilities as required.
  • At least 50% of the job will entail execution of the food service operation of a nutrition research kitchen:

    • Inventories and orders food and supplies

    • Supervises and assists in the production and delivery of research meals

    •  Maintains food safety and sanitation standards, monitors quality assurance and quality control.

    •  Cleaning and maintaining of equipment and work area

    • Maintaining communication among dietitians and research staff

    • Uses computer software for food purchasing and inventory control

    • Assists with calculating diet guides, formula education and diet instructions appropriate to the age, medical condition, outcome goals, and needs of the patient.

    •  Performs basic nutrition support functions including nutrient analysis, and formula order verification and recipe entry.

    •  Conducts nutrient analysis per policy.

    •  Enters nutrient analysis data into Nutrition database.

    • Enters formula order recipe into Nutrition database.

    • Verifies formula order recipe in Nutrition database.

    • May conduct other nutrition support functions under the supervision of an RD.

    • Handles ordering and inventory process to maintain adequate and safe supply of nutritional products and supplies.

MINIMUM QUALIFICATIONS:

  • An associate's degree in food and nutrition or dietetics from an approved Academy of Nutrition and Dietitetics (AND) Technician program.
  • Board registered as a Dietetic Technician by the American Dietetic Association.

PREFERRED QUALIFICATIONS:

  • Candidate must be a graduate of an accredited dietetic technician program (or equivalent education and experience).
  • Experience with Microsoft Word, Excel and Power Point required. Additional computer literacy desirable.
  • Experience with Inherited Metabolic Disorders not required.
  • ServSafe Food Handler Certification to be in place or will plan to get within 90 days of employment.
  • Emory Healthcare credentialing for research once applicant starts employment as directed by management.
